4 shelves, of 530x720 mm size. Temperature regulation range is from 30° up to 85° C. Heat distribution in the chamber is provided due to natural movement of the air streams (steam) from bottom- upwards. Steam humidification is achieved by moisture evaporation from the water reservoir under the temperature effect. A glass door and chamber lightning allow easy monitoring of the cooking process. A proving cabinet can be installed instead of a support unit of the bakery oven. Models with lid can be installed separately.
